Strawberry Cream Bars – Recipe Review – The 36th Avenue

The minute I saw these Strawberry Cream Bars from The 36th Avenue, I knew I wanted to make them! Especially since I had all but one of the ingredients on hand.
The recipe truly was easy to follow, quick to work up and the end result was delicious!

Yields:
16 Squares 

Prep Time:
15 minutes or so

Cook Time:
40 minutes (longer than recommended)

Ingredients:
     – 1 Box of Strawberry Cake Mix
     – 1/4 Cup of Soft Butter
     – 3 Eggs
     – 1 8 oz Package of Softened Cream Cheese
     – 1 Cup of Powdered Sugar
     – 1 Tablespoon of Lemon Juice
     – Strawberries to Garnish
     – 9″ x 9″ Pan

Ingredient Notes:
     I was contemplating leaving out the lemon juice. It was the one thing I didn’t have on hand, and really wasn’t sure why I should include it in my recipe. However, once I applied it, I understood completely – it helps thin out the frosting part. Very useful to know in future baking.
Also, I had trouble locating it in my grocery store. I searched in the baking and produce aisles, and finally found it in the aisle with the pickles and such. 

Recipe Notes:

     I did have to bake my mixture for a longer time than suggested as the top part was still quite jiggly. I keep putting it in for 5 more minutes, and tested at the end of each timer.
     I cut my strawberry pieces in half and used these halves to garnish. I suggest slicing much thinner as using the halves made the bar too tall to comfortably eat. I ended up taking off the strawberry pieces to eat first, and then the bar.
     The leftover frosting part is delicious with any leftover fruit you have! I plan on making a batch and taking it to my next family party with some fresh fruit.

I usually place my baked goods on a cake plate covered by a dome. I do not suggest leaving these bars out though. With the cream cheese ingredient, I recommend covering these up and storing in the fridge.
