Purple Ribbon Banana Bread – Recipe Review – Delightful E Made

Welcome to the July Pinterest Challenge Blog Hop, hosted by My Pinterventures. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen!

This month, I am sharing a recipe review for Delightful E Made’s Purple Ribbon Banana Bread. I have had banana bread on my mind for quite some time, and when I came across this recipe, I just HAD to give it a go! Actually, the chocolate version is the first one that caught my eye – mmm, chocolate!

Makes:

Two Loaves – I used a square cake pan though

Time Spent:

20 Minutes Prep + 1.5 Hours Baking (longer than expected)

Ingredients I Used:

  • 3 Ripe Bananas
  • 1/2 Cup of Vegetable Oil
  • 1 Cup of Granulated Sugar
  • 2 Eggs
  • 4.5 Teaspoons of Lemon Juice (from a squeeze bottle)
  • 2 2/3 Cups of Flour
  • 1 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Salt
  • 1/3 Cup of Unsalted Butter
  • 1/3 Cup of Brown Sugar
  • Purple Ribbon Banana Bread Recipe from Delightful E Made

I Also Used:

  • A Masher (which the one I use is really for pulling apart meat, but I use it for mashing potatoes, eggs, etc. A potato masher would work for this too)
  • 8 x 8 Square Pan
  • Variety of Mixing Bowls and Utensils
  • Hand Mixer
  • Measuring Cup and Spoons
  • Toothpicks

Ingredient Notes:

BAKING POWDER: I did not have any on hand, so I omitted it.

NUTS: Todd doesn’t like nuts, so I omitted them.

Recipe Notes:

I love this masher!

I figured two 3 1/2″ x 7 1/2″ loaf pans would be equivalent to an 8″ x 8″ square pan – actually I thought it would be a little larger just thinking math-wise, but my pan was really filled too much, and required sooooo much longer in baking – at least another half hour.

I enjoyed my banana bread with some vanilla ice cream. The ice cream is covered with the crumb topping from the banana bread.

Overall, Todd enjoyed the banana bread and ate most of it, but I was a tiny bit disappointed with how turned out. I found it to be a little dry, and missing flavor. If I were to try this recipe again, I would add at least two more bananas and some vanilla extract. I would like to think more banana would add to the moisture, as well as the flavor, but that I am not sure. The crumb topping was very good, but also on the drier side, a very big mess and a thick mixture (like a lot of it). I might add more butter to hold it together better, and cut everything by 0.25 – 0.5 for less. I would also bake in a larger dish (unless I go out, and purchase another loaf pan).

    Crumb topping on banana bread sounds so good, I’ve never had it with crumb topping. Definitely try it with more bananas, it is disappointing when you back banana bread and it has no flavor. It’s happened to me before.

    I do like banana bread so was happy to read your review of this recipe. The crumb topping reminds me of coffee bread. Am pinning to try the topping with a recipe I have to see if it still stays moist or not.

    I have never though of adding a crumb topping to my banana bread recipe! I often add in sweetness with leftover peanut butter cups or chocolate chips though.

    I love a good banana bread! Haven’t seen it before with a crumb topping, so I gotta try that out. Try adding some cinnamon as well – it helps bring out the sweetness without extra sugar. ; )

    I love banana bread. I think that it gets better the “older” it is as the banana is making it more mushy as it continues to ripe. Adding extra banana for the next time is a good idea, too!

    It looks delicious but don’t you just hate trying a new recipe and it not coming out as well as it should? But I’m sure with your ideas for adjustments on the next go-around, it would be much better.
