Vee’s Mega Oatmeal Raisin Cookies

This is a recipe to make Vee’s Mega Oatmeal Raisin Cookies, which are
palm sized cookies with Oatmeal & Raisins.

I’m SOOOO glad I got the chance to make my favorite cookie in a MEGA way because I am so extra!
It’s been my current obsession and I wanted to share this recipe since holidays are fast approaching.

Start by gathering your ingredients – I bought mine at the local Wal-Mart since I am making two MEGA batches (not a sponsored post though).

Pre-Heat your oven to 325 F.

Wet Ingredients:

Step 1: Mix Granulated Sugar, Brown Sugar & Butter with a hand mixer until creamy, then add the Eggs & Vanilla Extract and mix until fully incorporated into the batter. 

Dry Ingredients:

Step 2: Toss with a silicone spatula: Plain Flour, Baking Soda, Cinnamon, Sea Salt & Oats.

Step 3: In a large bowl, incorporate the Wet and Dry Ingredients, then add Raisins a handful at a time to ensure they get well dispersed in the batter.

Optional:
– Add in 1 Cup of Chopped Walnuts
– Refrigerate the batter for 1 hour for easier assembly .

Step 4: Line pans with parchment paper. With a medium cookie scoop place cookie dough on hand and form into a ball, then place on cookie sheet. I highly recommend using a form to spread them out to palm size so they cook all the way through (instead of overcook the bottom, and undercook the actual cookie – like happened to me with my first batch).

Step 5: Bake at 325 F for 15-20 minutes, or until golden brown (Bake time will vary per oven). Let sit for 2 minutes, then move to a cooling rack until cooled. ENJOY!
